Inside Chefway Café: warm wood tables, cream plaster and pendant lights

Borneo Fusion Café · Sibu & Miri

Sarawak, plated.

Western technique. Sarawak ingredients. Dabai, terung dayak and torch ginger, cooked the way we grew up eating them.

From Sarawak to the plate

Three Sarawak ingredients that set our kitchen apart

Dabai

黑橄榄

The Sarawak black olive. Creamy, savoury, a little smoky. We turn it into a sauce, a butter and a fried-rice base.

Terung Dayak

原生茄子

The round native eggplant. Bright and sour, it lifts a seafood broth the way lemon lifts a sauce.

Torch ginger flower

姜花

Bunga kantan. Floral, peppery, unmistakably here. A few slivers change a whole dish.
